Happy birthday, I baked you a COBBLER!

Went out to dinner last night for Taryn's birthday.  After stuffing our faces with ribs, tri tip, garlic bread, sweet potato fries, mac n cheese and regular fries, we began plotting our dessert course.  The Wood Ranch apple cobbler was calling Taryn's name.  But then the waitress approached carrying an ice cream sunday with a candle in it, and we knew the cobbler would not be happening.  Oh wait, Taryn lives with a baker.  Time for a birthday treat, especially since I am extremely inept in the awesome-gift-giving department.  When in doubt, bake I say.  Deep Dish Brown Sugar Apple Cobbler, hooray!

Here's what you'll need:


Filling

4-5 Granny Smith Apples, peeled and thinly sliced (lightly lemon-juice 'em to keep from browning)
1 Tbs Granulated Sugar
1/4 Cup Brown Sugar
1/2 tsp Cinnamon
1/4 tsp Nutmeg
2 tsp Lemon Juice

Crust

1 Egg
1/2 Cup Granulated Sugar
1/2 Cup Dark Brown Sugar
1 tsp Vanilla
1 Cup Flour
1 tsp Baking Powder
1/4 tsp Salt
1/4 tsp Cinnamon
1/4 Cup Unsalted Butter, melted

1. Preheat oven to 350 Degrees Fahrenheit.  Lightly grease one 8x8 inch baking dish.


2. Stir together 2 Tbs sugar, 1/4 cup brown sugar, cinnamon, nutmeg and lemon juice.  Sprinkle over sliced apples and gently mix with hands to evenly coat apples.  Pour apples into bottom of prepared baking dish.


3. In a mixer on medium speed, beat egg with 1 cup sugar and vanilla extract.  Add in flour, baking powder, cinnamon and salt, and mix until just combined.  Batter should have a crumbly consistency. Sprinkle crust batter over top of apples in baking pan.  Pour melted butter evenly over top of crust.


4. Bake at 350 Degrees for 30-40 minutes, until crust is lightly browned.  Remove from oven and cool on rack for 15 minutes before serving. 

May be served warm or cold.  With or without ice cream on the side.  But let's be honest.  If you're gonna have cobbler, it's gonna be warm and frickin' a la mode.

BTW, this cobbler can be made with pretty much any filling.  Add some cranberries to the apple filling.  Go all blackberry on us.  Perhaps peach it up.  A blueberry-peach combo would be delicious.  Ooh, mixed berry with raspberries included!  Maybe use just straight up sugar and nix the brown sugar for a berry cobbler.  Definitely keep the brown sugar for the peach cobbler.  Definitely.  Rhubarb, anyone?  Hold up, is the rhubarb even a fruit?  It kind of scares me.  Often appears to be rather neon pink.  I prefer not to consume things in the neon spectrum of the rainbow...answer via google: "Rhubarb is a very ornamental vegetable, often prepared and eaten like a fruit."  Well now it just has two strikes against it.  Neon and ornamental.
