Chocolate. Peanuts. Caramel. Nougat. What could be better? How about all of that in COOKIE FORM??? Yes! Enter my Big Fat Nutty Cookie. I love love love Snickers bars and have wanted to put them in a cookie for a while, so here goes! In order to play up the peanut component of the candy bar, I added a bit of chunky peanut butter to the batter. This also helps to cut the sweetness a bit, since there's a lot of sugar in both the batter and the candy bar already. Also, I used natural peanut butter here. Usually this is not a good idea in baking, but since there are so many other things holding the cookie together, and the peanut butter isn't a major component ratio-wise, it works here.

Here's what you'll need:
2 Cups All-Purpose Flour
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
3/4 Cup Unsalted Butter, softened
1 Cup Dark Brown Sugar
1/2 Cup White Sugar
1/2 Cup Extra Chunky Peanut Butter
1 Tablespoon Vanilla Extract (plus a little extra if you'd like, never hurts)
1 Egg + 1 Egg Yolk, Room Temperature
1 Cup Chopped Snickers (about 2 regular sized bars, or 8 fun size bars)
1 Cup Semi-Sweet Chocolate Chunks
1. Sift together flour, baking soda and salt.
2. In a large bowl, beat butter and sugars until smooth. Beat in vanilla and egg+yolk until creamy. Add peanut butter and beat until well combined. Add in sifted dry ingredients and mix until just combined.
3. Add snickers and chocolate chunks and stir gently using a spatula until evenly combined.
4. Refrigerate dough for at least 20 minutes as you heat oven to 325 Degrees Fahrenheit. Cold dough will make your cookies thicker. If you prefer thin cookies, no need to refrigerate the dough.
5. Drop dough in balls about 2 Tablespoons in size, 2 inches apart on un-greased cookie sheets. Bake 15-17 minutes until edges of cookies appear lightly toasted. Allow cookies to cool on pan for 2 minutes before transferring to wire cooling racks.
Makes 2 Dozen Cookies.
Yes! Delicious! Such a good call to use chunky peanut butter, the extra peanuts add a nice texture. And you gotta love the melted caramel courtesy of the Snickers. This one's a keeper.
