The best cookie ever.

Yeah, I said it.  My Great Great Aunt Lora's Oatmeal Cookies are the best cookie ever.  And then I went and added mini chocolate chips to them.  Mmhm.  That's right.  I said mini.

You've seen this recipe on here before, here's yet another version with just a few little tweaks to the ingredients (because I didn't have coconut or the right kind of oatmeal and it was a last minute decision to make these and I was lazy with measuring...), so here you go.  Improvised oatmeal cookies.  See?  Baking isn't all science, there's a bit of fun to it, too.

Here's what you'll need:

1/2 Cup Sugar
1/2 Cup Brown Sugar
1/2 Cup Unsalted Butter, room temperature
1 Egg, beaten
1/2 tsp Vanilla Extract
1 Cup Flour
1/4 tsp Salt
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1 1/2 Cups Instant Oatmeal
1 - 1 1/2 Cups Mini Semi Sweet Chocolate Chips (Mini is key!!!  In this cookie, big chocolate chips overpower the awesomeness of the cookie itself, but mini chips complement it perfectly.)
A little bit of Cinnamon

1. Preheat oven to 375 Degrees Fahrenheit.  Grease two large baking sheets with butter (I just rub the wrapper of the butter I use in the recipe on the baking sheets).


2. Beat sugars and butter together until fluffy.  Add egg and vanilla and beat until well incorporated.  Add flour, salt, soda, powder and mix until just incorporated.  Gently mix in oatmeal, then chocolate chips.  If you like a lot of chocolate chips in every bite, go the cup-and-a-half route on this one.


3. Drop by  heaping tablespoonful onto prepared cookie sheets (should make about 24-30 cookies).  Sprinkle a tiny bit of cinnamon on top of each cookie.  Bake at 375 for 10 or so minutes, until edges are just turning golden brown.  Remove from oven and allow to cool on pan for one minute before transferring cookies to cooling racks.


This time around I served these cookies fresh out of the oven to the cast and crew of a show being performed in my apartment before the audience members arrived.  The leading man promptly declared his love for me.  Like I said, best cookie ever.
