Snickerdoodles

Many people have eaten a Snickerdoodle. But many people instead call it a cinnamon sugar cookie. That's just not fair. You're depriving yourself of saying such a fun word! It's like the supercalifragilisticexpialidocious of cookies! So here is a family recipe of mine for all you lovers of cinnamon and sugar. And don't you dare deprive it of it's name. It deserves to be called a snickerdoodle. Here's what you'll need:

1 Cup Unsalted Butter, softened
1 1/4 Cup Sugar, plus 2 Tbs Sugar
2 Large Eggs
2 1/4 Cup Flour
2 tsp Cream of Tartar
1 tsp Baking Soda
1/4 tsp salt
1 Tbs Cinnamon

Pre-heat oven to 400 Degrees Farenheit.

In a large bowl, beat butter and 1 1/4 Cup Sugar until creamy. Beat in eggs. Beat in 1 Cup four, Cream of Tartar, Baking Soda and Salt. Stir in remaining flour. Dough will be firm.

Combine 2 Tbs Sugar with Cinnamon on a sheet of wax paper. Shape dough into Tablespoon-sized balls (about 1 1/4 inch across). Roll each ball in the cinnamon/sugar mixture making sure to coat completely. Place 2 inches apart on cookie sheet. Do not flatten balls!

Bake at 400 degrees for 10 minutes until golden brown. It is very easy to burn these cookies! Don't leave in longer than necessary, and make sure to transfer to cooling rack immediately upon removal from the oven.

Now go enjoy some crunchy on the outside, soft in the middle, cinnamon sugary, snickerdoodle goodness!
